The cultivation of the olive began 1,000 years before Christ, and in the area where this oil is produced, the olive was introduced by the Greeks. Over the centuries,
the growing of olives expanded to become an important part of the economy of the province of Cosenza. Thanks to its adaptability to harsh soils, the olive tree has allowed growers to use vast
areas of land unsuited to other crops.
The increasing use of olive oil in the diets of the people of northern Italy has led to an expansion of olive-growing. Olio Extravergine d'Oliva Bruzio has a
maximum acidity of 0.80 percent. It is green in colour with tones of yellow, while its flavour and scent are fruity. During the pressing process, the only mechanical and physical methods
permitted are those that yield an oil that faithfully captures the special and original qualities of the olive. The area qualifying for the Bruzio DOP description is located within the
province of Cosenza.
