Tony May, a great Italian restaurateur (among others in New York: Rainbow Room, Palio, San Domenico and SD26), used to say that "Italian cuisine is Italian abroad and regional in Italy". 
       We understand how right he was when, traveling in Italy from one region to another, even the Italians find themselves lost in front of gastronomic proposals that have names never heard before and difficult to understand even by people living no more than 50 miles away. 
       It is easy to imagine how much more embarrassed can be a foreign tourist crossing Italy in search of the flavors and gastronomic refinements of regional cuisine.

       With this in mind, we've created this glossary that can help the gourmet traveler avoid getting lost when dining in trattorias or shopping at markets, no matter if he is in Apulia or Piedmont, Friuli or Sardinia.
