The lentil is one of the oldest edible plants known to man. In the uplands of Castelluccio di Norcia several ecotypes of lentil have long been grown. The distinctive
taste and colour of the lentils are derived both from the environment in which they are grown and from the cultivation techniques which have remained unchanged for centuries.
The area of production encompasses several town districts in the provinces of Perugia and Macerata.
