Prosciutto di Carpegna dates back to the ancient times when Carpegna was a "vicus" (village) in the Roman municipality of Pitinum Pisaurense.
Prosciutto di Carpegna is a salted and naturally-aged cured ham. After ageing, the finished product will usually weigh between 8.5 and 10.5 kilos. The ham has
just the right amount of solid whitish-pink fat on the outside. When cut open, it displays a salmon-pink meat that is distinctively delicate, sweet and fragrant.
The special morphological, environmental and microclimatic conditions of the designated production zone give the Prosciutto di Carpegna a highly distinctive
character. Completely free of polluting industrial installations and enjoying a climate free of excessive humidity, the Carpegna district is blessed with meadows, woodlands containing conifer and
broad-leaf trees, and many species of flowers and shrubs.
The treatment of the ham also takes place within the district of Carpegna.
