The bell pepper is one of the distinguishing features of the culinary tradition of the region of Basilicata. Numerous historical documents indicate this as the original area of cultivation. The Peperone di Senise is a particularly thin-skinned fruit with a low water content which makes it perfect for drying by natural sunlight. 
       The Peperone di Senise is markedly different from other varieties of the same fruit, and is readily recognisable by its distinctive taste. The environment and the soil in which it is grown endow it with an exceptionally high level of quality. The bell pepper has certainly been cultivated more successfully in this area than in any other. 
       It adapted perfectly to the local pedological-environmental conditions of Senise, yet also retained some of the rustic elements of the first plants to be introduced there. The area in question encompasses many town districts in the Sinni and Agri valleys in the provinces of Potenza and Matera.
